    How to Make Chocolate Truffles at Home

     

    Truffles are by far my favorite way to indulge in chocolate. If you don't have time to run to your favorite chocolatiere, you can make your own specialized truffles at home.

     

    A basic truffle recipe consists of cooled balls of ganache and tempered chocolate. Ganache is a mixture of melted chocolate and cream while the crunchy coating on the outside is made from tempered chocolate. This form of chocolate has been melted to a specific temperature, cooled and then remelted again. This ensures that the chocolate is stabilized and will not separate.

     

    Beyond the classic recipe for truffles, your imagination can stretch by adding flavoring to your ganache centers. Many times the flavor in added directly into the ganache then rolled in cocoa powder then dipped into the tempered chocolate. When the chocolate is still wet, the truffle can be rolled into various coatings of coconut, chopped nuts, candies and powdered sugars. The possibilities are endless!
