    Spain:

    This mountainous country possesses more vineyard land than any other country on earth, and ranks third in wine production after France and Italy. Spain is best known for its red Riojas and its Sherries, however other wines and regions are quickly gaining notoriety. Like France, Spain divides wine into categories; table wine at the bottom level and quality wine at the top, with a large emphasis on geographical origin. VdM (Vino de Mesa) is a basic table wine. VC (Vino Comarcal) wines are a level up. VdlT (Vino de la Tierra) refers to one of the country’s 25 distinct regions, and each wine possesses a local character. At the top level, only about fifty wines are considered DO (Denominacion de Origen). These wines come from the best-known regions and are the equivalent of France’s Appellation Contrôlée. DOC (Denominacion de Origen Calificada) is reserved for wines that adhere to the most stringent regulations. So far, Rioja is the only wine to gain the Calificada classification.

    Romans planted vineyards in Saint-Emilion as early as the second century. It is located right bank of the Gironde and named after the monk Emilion. The "Saint Emilion Grand Cru" label on a wine explains that the wine is from any one of the many vineyards on the list of vineyards that qualify as Saint Emilion Grand Cru.

    Chicken & Bacon Press

    Ingredients

    1 whole chicken
    2 lb bacon in one piece
    1 onion
    2 carrot
    2 sprig parsley
    2 stalks celery
    sprigs thyme
    1 sprig marjoram
    5 peppercorns
    2 tbsp chopped parsley

    Preparation

    Put the chicken and bacon into a saucepan with the onions, carrot, celery herbs, salt and a few peppercorns.

    Add about 2 inch of water. Bring to a boil, cover, and cook in a moderate oven 350°F for 1-1/2 to 2 hours, depending on the size and age of chicken. Discard the vegetables.

    When the chicken and bacon are cooked, skin and chop the meat into 3/4 inch dice while it is still hot. Add the parsley, taste and correct the seasoning, then press into a bowl. Pour a little of the cooking liquid over the top, cover with a plate and weight it down. Leave the mixture overnight in the fridge. Cut into slices and serve with a salad.

    A more elaborate version can be made by layering the chicken, bacon and chopped parsley.
