Chevre Mashed Purple Potatoes

Ingredients
- 32 oz purple potatoes peeled and cut into large cubes
- 3 tbsp unsalted butter
- 1/2 cup half-and-half
- 7 oz soft chevre cheese
- 2 tsp salt
- 3/4 tsp white pepper
Instructions
- Place the potato cubes in a large saucepan and cover with water. Bring to a boil and cook until fork tender, about 12 minutes.
- While the potatoes are cooking, combine the butter, half-and-half, and cheese and heat until the cheese melts, stirring constantly. Set aside.
- Drain the potatoes and return to the saucepan. Cover with a towel and shake over medium heat for 30 seconds, or until the potatoes are dry. Add the reserved cheese mixture and mash with a hand masher until smooth, adding the salt and white pepper as you mash. Serve immediately.
