Ingredients
  

  • 1 lb whitefish fillet such as cod flounder, haddock or halibut
  • 2 tbsp olive oil
  • 2 whole green onions with tops chopped
  • 4 whole Garlic cloves roasted in their skin
  • 1/4 cup basil leaves
  • 4 sprigs parsley
  • 1 cup fish stock
  • 1/4 cup plain yogurt
  • 1 pinch salt
  • 1 pinch black pepper

Instructions 

  • Sauté, grill, bake, or steam the fish fillets.
  • Meanwhile, make the sauce. In a small skillet, sauté the onions in the oil for 2 to 3 minutes, then put the mixture into a blender with the roasted garlic cloves (skins removed) and the remaining ingredients. Blend until smooth, then return the purée to the skillet and heat until it has thickened slightly.
