4whole boneless skinless chicken breastrinsed, patted dry, and pounded to 1/4-inch thickness
4tablespoonchevre cheese4 to 8-Tbsp.,chèvre (goat cheese) , flavored with your choice of seasonings
1pkg frozen puff pastry4 puff pastry squares (5 to 6 inch squares), cut from frozen puff pastry sheets
1dash saltto taste
1dash Black pepperfreshly ground, to taste
1whole egg white
Instructions
1 egg, lightly beaten
Preheat the oven to 425 degrees F. Grease a baking sheet.
Place 1 or 2 tablespoons of chèvre in the center of each flattened breast and fold the chicken around the cheese.
Place a rolled breast half in the center of each pastry square and sprinkle with salt and pepper.
Pull the pastry up around the chicken to encase it. Pinch the seams together and seal with warm water. Place the pastry packages seam side down on the prepared baking sheet. Garnish the top of each package with a design cut from additional puff pastry if you wish.
Poke four holes in the top of each package and brush with the beaten egg. Bake for 25 minutes. Let stand for 10 minutes before serving.
