Peel the potatoes, cut them lengthwise into 1/4-inch slices, then cut each slice lengthwise into 1/4-inch strips. Soak the strips in a bowl of ice water for 10 minutes. Drain and dry them thoroughly with paper towels.
Lay the slices in a single layer on an oiled baking sheet, then brush them with oil and sprinkle with salt. Bake at 375 F for 40 minutes, then turn each strip to brown the other side for 10 to 15 minutes more.
