32ozpurple potatoespeeled and cut into large cubes
3tbspunsalted butter
1/2cuphalf-and-half
7ozsoft chevre cheese
2tspsalt
3/4tspwhite pepper
Instructions
Place the potato cubes in a large saucepan and cover with water. Bring to a boil and cook until fork tender, about 12 minutes.
While the potatoes are cooking, combine the butter, half-and-half, and cheese and heat until the cheese melts, stirring constantly. Set aside.
Drain the potatoes and return to the saucepan. Cover with a towel and shake over medium heat for 30 seconds, or until the potatoes are dry. Add the reserved cheese mixture and mash with a hand masher until smooth, adding the salt and white pepper as you mash. Serve immediately.
