Vegetable oil spray
Instructions
Beat together egg whites and just a splash of water (to give the whites a little volume).
Sauté the onion, tomato, and pepper in one pan on low heat.
Spray a pan or skillet with just a touch of vegetable oil spray. Pour in whites and cook to desired consistency.
Either top the whites or fold in vegetable mixture and serve hot!
