Ingredients
  

  • 10 - 12 egg whites
  • 1 small purple onion chopped fine
  • 1 medium tomato chopped fine
  • 1 green pepper chopped fine
  • 1 red pepper chopped
  • 1/2 cup grated gouda cheese
  • Vegetable oil spray

Instructions 

  • Beat together egg whites and just a splash of water (to give the whites a little volume).
  • Sauté the onion, tomato, and pepper in one pan on low heat.
  • Spray a pan or skillet with just a touch of vegetable oil spray. Pour in whites and cook to desired consistency.
  • Either top the whites or fold in vegetable mixture and serve hot!
