In a medium bowl, mix together the flour, baking powder, and cinnamon. Add the egg and mix well. Add the soymilk and beat for a few seconds until smooth. Add the raisins and sunflower seeds and mix again.
Drop the batter, 1/4 cup at a time, onto a hot, oiled skillet and cook over medium heat until bubbles appear on the surface of the pancakes and the bottoms are brown. Turn the pancakes over and cook the other side.
Serve with fresh fruit, fruit-sweetened jams, or your choice of honey or syrup.
