1/4lbthinly sliced smoked baconcut crosswise into 1/4-inch pieces
3/4cupunsalted buttercut into pieces
¾lbCooked shrimpbaby bay shrimp
2tablespoonschivesfinely chopped
2tablespoonFresh flat leaf parsleyfinely chopped
1dash saltto taste
1dash Black pepperfreshly ground, to taste
1cupparmesan cheesegrated
Instructions
Bring a large pot of water to a boil. Add the pasta and cook until al dente, following the manufacturer's suggested cooking time.
As soon as the pasta starts cooking, heat the olive oil in a large skillet over medium heat. Add the bacon and cook until it just begins to turn crisp, 3 to 4 minutes.
Pour off most of the fat from the skillet. Add the butter and reduce the heat to low. As soon as the butter melts, stir in the shrimp and cook until heated through, 1 to 2 minutes. Stir in the chives and parsley and season to taste with salt and pepper.
As soon as the pasta is done, drain it and toss well with the sauce. Serve immediately wirh parmesan cheese.
