Place the roasted barley in a kettle filled with 1 quart of water.
Bring the water to a boil, reduce the flame to low, and simmer to desired strength. For a mild tea try simmering for 3 - 5 minutes; for a stronger flavor, simmer 10 - 15 minutes.
In the summer months this tea is very refreshing when slightly chilled and served with a slice of lemon on the side.
