- 5 cups hot water
- 1/2 cup kosher salt
- 1/2 cup packed light or dark brown sugar
- 48 oz dark beer 3 bottles
- 2 tbsp molasses
- 1 tbsp Sriracha Thai hot chili sauce or to taste (optional)
- 1 tbsp cracked black peppercorns
- 2 tsp dried sage
- 1/4 cup peeled garlic cloves
- 6 lb pork loin chop 6 1-1/4 to 1-1/2 inch thick center-cut loin pork chops
Stir together the hot water, salt, and sugar until the salt and sugar are dissolved. Stir in the rest of the brine ingredients. Cool to at least 45°F in the refrigerator.
Trim any excess fat from the pork. Roast for approx. 2 hours
