Ingredients
  

  • 5 cups hot water
  • 1/2 cup kosher salt
  • 1/2 cup packed light or dark brown sugar
  • 48 oz dark beer 3 bottles
  • 2 tbsp molasses
  • 1 tbsp Sriracha Thai hot chili sauce or to taste (optional)
  • 1 tbsp cracked black peppercorns
  • 2 tsp dried sage
  • 1/4 cup peeled garlic cloves
  • 6 lb pork loin chop 6 1-1/4 to 1-1/2 inch thick center-cut loin pork chops

Instructions 

  • Stir together the hot water, salt, and sugar until the salt and sugar are dissolved. Stir in the rest of the brine ingredients. Cool to at least 45°F in the refrigerator.
  • Trim any excess fat from the pork. Roast for approx. 2 hours
