Ingredients
  

  • 1 large Fresh mango diced (or can of diced pineapple, drained)
  • 1 cup frozen corn thawed
  • 3 stalk scallion chopped
  • 1 medium Red bell pepper seeded, diced
  • 1 15 oz Can Black beans rinsed, drained
  • ¼ cup cilantro chopped
  • ½ medium lime juiced
  • 1 tablespoon ground cumin
  • 1 tablespoon canola oil

Instructions 

  • 1. Combine all ingredients in a bowl.
  • Alternatives: 1/2 cup chopped onion, 2 plum tomatoes diced, 1 can pinto beans (drained), diced carrots.
