Ingredients
  

  • 1 c Water warm
  • 1 tbsp Sugar granulated
  • 1/2 oz 15 g Active dry yeast
  • 2 c Milk scalded, warm
  • 1/4 c Sugar granulated
  • 1/4 c Butter melted
  • 8 oz 227 g Buckwheat flour
  • 2 c Milk lukewarm
  • 8 oz 227 g Flour, all purpose
  • 4 whole egg yolks
  • 2 tsp 10 ml Salt
  • 2 cups heavy whipping cream whipped
  • 4 whole egg whites whipped stiff

Instructions 

  • Combine in large bowl. Let rest in warm spot until foamy.
  • Combine in mixer bowl with paddle attachment. Mix at low speed until well blended. Add reserved yeast mixture. Mix at low speed for 1 minute. Cover bowl. Let rest until doubled in volume, about 2 hours. Return mixture to mixer with paddle attachment.
  • Add to mixture. Mix at low speed for 1 minute. Cover bowl. Let rest until doubled in volume and bubbly, about 1 hour. Return mixture to mixer with paddle attachment.
