- 3/4 lb pasta
- 1/2 cup unsalted butter cut into pieces
- 1/2 cup extra-virgin olive oil
- 4 each Fresh scallions ends trimmed and cut crosswise into thin slices
- 4 whole Garlic cloves chopped fine
- 2 tbsp finely chopped fresh chives
- 2 tablespoons fresh italian parsley chopped fine
- 1 dash salt to taste
- 1 dash white pepper to taste
- 1 dash parmesan cheese to taste
Bring a large pot of water to a boil. Add the pasta and cook until al dente, following the manufacturer's suggested cooking time.
A few minutes before the pasta is done, melt the butter with the olive oil in a large skillet over medium heat. Add the scallions and garlic and sauté just until the scallions have wilted and both the scallions and garlic give off a rich fragrance, 1 to 2 minutes.
As soon as the pasta is done, drain it and toss with the scallion mixture and the parsley and chives. Season to taste with salt and white pepper. Serve immediately, passing Parmesan for guests to add to taste.
