Combine the sugar, corn syrup, water and cinnamon.
Stir until dissolved. Bring to a boil. Cook covered for about 3 minutes until the steam has washed down any crystals that may have formed on the sides of the pan. Uncover and cook, without stirring, nearly to the hard-crack stage, 290°. Remove cinnamon stick if used. Add: A few drops of red vegetable coloring
After cooking glaze, keep it in a double boiler over--not in--boiling water. Now, work quickly. Dip in: Apples on skewers
Place them on a metal flower holder to harden. Or, to make these lollipops easier to handle after dipping, dust the tops with finely chopped nutmeats or with sugared puffed dry cereals; or arrange on the top of each a trefoil decoration of three pecan or walnut halves, and allow the apples to dry upside down on a piece of foil, as shown.
