Ingredients
  

  • 2 tbsp white vinegar
  • 6 cornichons
  • 1 cup chopped flat-leaf parsley
  • 1 garlic clove
  • 1 anchovy fillet
  • 1/4 cup capers drained
  • 2 tbsp chopped onion
  • 2-1/2 tbsp Dijon mustard
  • 6 tbsp olive oil
  • 1/2 lb very lean top round sliced no more than 1/16 inch thick

Instructions 

  • TO MAKE THE SAUCE, place all ingredients, except the oil, in the bowl of a food processor and chop coarsely. With the machine running, add the oil, drop by drop, until the mixture is creamy; do not overmix. Refrigerate, tightly covered, until ready to use.
  • To serve, spread one side of the prepared Homemade HOMEMADE FRENCH BREAD baguette with a small amount of prepared HERB BUTTER 1.
  • Place a small piece of meat on top of the bread, covering the surface completely and "rippling" the meat if necessary. Spoon some sauce over the meat and serve.
