Soak the beans overnight. In the morning simmer in salted water 20 minutes. Drain well, reserving the liquid, and pour into a casserole. While the beans are cooking, sauté the carrot, onion, and salt pork together till the pork is nicely colored and crisp. Add with the seasonings to the beans. Add the white wine and just enough bean liquor to cover.
Cover, and bake at 300°F until the beans are tender - about 2 to 2-1/2 hours. Combine the breadcrumbs, melted butter, parsley, and garlic. Sprinkle on top of the beans and return to the oven, uncovered, to brown.
