Ingredients
  

  • 1 cup white cannellini or Great Northern beans; drained
  • 1 1/2 cups steamed cauliflower cooled and chopped
  • 4 oz. Cabot Alpine Cheddar shredded (about 1 cup)
  • 4 oz. Cabot 50% Reduced Fat Cheddar shredded (about 1 cup)
  • 1 1/4 cup plain nonfat Greek yogurt
  • 1/2 tsp. McCormick Pure Ground Black Pepper to taste
  • 1/8 tsp. McCormick Chili Powder
  • 1/4 cup buffalo wing sauce
  • 2 Tbsp. extra virgin olive oil
  • 1 red bell pepper chopped (about 2/3 cup)
  • 1/3 cup chopped scallions white and light green parts only
  • Carrot chips and celery sticks for dipping

Instructions 

  • 1. Preheat oven to 375 degrees.
  • 2. Add beans, steamed cauliflower, cheese, yogurt, black pepper, chili powder, buffalo wing sauce and olive oil to bowl of a food processor fitted with a metal blade. Pulse 10-15 times until well combined and roughly chopped.
  • 3. Fold in chopped bell pepper and scallions.
  • 4. Spoon into an ungreased 10" casserole dish. Bake uncovered for 25 to 30 minutes until hot and bubbly.
  • 5. Remove from oven and let cool 10 to 15 minutes. Serve warm with carrot chips and celery sticks.
