Ingredients
  

  • 1 lb salt cod cooked and flaked
  • 1 lb 3 large potatoes, mashed
  • 1 whole egg
  • 1 whole carrot. cooked and finely diced optional
  • 1 whole leeks cooked and finely diced, optional
  • 1 pinch salt to taste
  • 1 pinch pepper to taste
  • 2 tablespoon butter or oil for frying

Instructions 

  • Mix the cod, potatoes and egg together. Refrigerate for 1 hour. Shape into cakes and roll in bread crumbs. Place on a cooling rack and refrigerate for another hour. Place in a skillet coated with oil or melted butter and fry until cakes are golden.
