Bring the water and salt to a boil over high heat. Add the shrimp, cover, and reduce the heat to medium-low. Simmer the shrimp 5 to 7 minutes, or until they turn pink (do not overcook). Drain well.
Place the shrimp in a bowl and refrigerate until cold.
Arrange the cold shrimp on a serving platter, sprinkle with lemon juice, and serve with the sauce or dip of your choice.
