Preheat oven to 350°F.
In 1-quart saucepan, melt 2 tablespoons butter; brush over sole fillets. Sprinkle with salt, seasoned salt and pepper.
Roll up each fillet and place, seam side down, in 9" by 9" baking dish.
Pour 1/2 cup milk over fillets; bake in oven 25 minutes or until fish flakes easily when tested with fork.
Meanwhile, in 2-quart saucepan over medium heat, melt remaining butter. Stir in flour; gradually add remaining milk; cook, stirring, until thickened.
Reduce heat; stir in cheese and sherry. Preheat broiler if manufacturer directs.
Spoon liquid from cooked fish. Stir cup liquid into cheese sauce. (If not using sherry use extra 3 tablespoons liquid.)
Pour cheese sauce over fish; sprinkle with paprika. Broil about 1 minute, just until cheese sauce is slightly golden.
