Ingredients
  

  • 1-1/2 - 2 lbs smoked haddock
  • 4 tbsp butter
  • 1 medium onion sliced thin
  • 1/2 tsp freshly ground pepper
  • 1 cup milk
  • 1 bay leaf
  • 1/8 tsp nutmeg
  • Dash of cayenne pepper

Instructions 

  • Soak the haddock in warm water for 1 hour.
  • Butter a shallow baking dish. Place the haddock in the baking dish.
  • Preheat the oven to 375°F.
  • Melt the butter in a skillet and cook the onion over medium heat until soft.
  • Stir in remaining ingredients, and pour mixture over the haddock.
  • Bake for 45 minutes.
