Ingredients
  

  • 1 cup diced fresh pineapple cut into 1/2-inch dice
  • 1 cup diced strawberries cut into 1/2-inch dice
  • 1 cup diced mango cut into 1/2-inch dice
  • 2 tbsp minced candied ginger or 2 tsp fresh
  • 2 tbsp fresh lime juice or to taste
  • 2 tbsp packed light-brown sugar or to taste
  • 1/2 cup slivered fresh mint leaves

Instructions 

  • Combine all the ingredients in a nonreactive mixing bowl and gently toss to mix.
  • Correct the seasoning with lime juice or sugar as needed.
  • The ingredients can be prepared ahead of time, but do not combine them more than 10 minutes before serving.
