Ingredients
  

  • 1 cup unbleached all-purpose flour
  • 1 cup semolina flour
  • 1/2 cup water
  • 1 cup low-fat cottage cheese
  • 2 cups flat leaf parsley finely chopped
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp grated nutmeg
  • 1 dash pepper to taste
  • 1/2 cup skim milk

Instructions 

  • To make pasta dough, mix flours in a medium-size bowl. In center of bowl, make a well in flour. Pour water in middle, slowly adding water to flour. Dough should be soft not sticky.
  • When you can form a ball transfer to a lightly floured surface. Knead a few minutes. Wrap dough in waxed paper. Let rest 15 minutes.
  • Blend cottage cheese, parsley, Parmesan cheese, nutmeg, pepper and milk in a medium-size bowl.
  • Roll out dough to 1/8 inch thick. Drop filling by teaspoonfuls about 2 inches apart over half of dough. Fold over remaining dough, cut in squares and seal.
  • Boil in unsalted water until tender, about 5 minutes.
  • Cover with favorite sauce and serve.
