1cupJapanese bread crumbs or any bread crumbs made from good quality white bread
½cupvegetable oil or needed amount for frying
Instructions
Sift the flour with the salt and pepper. Set aside.
Cut the sole into diagonal crosswise strips 1/2 inch wide. Roll them in the flour, then dip them in the frothy egg whites, and finally coat them with the bread crumbs.
Heat 3 inches of oil in a deep, heavy wok or skillet to 360°F. Quickly fry the strips of sole, a few at a time, until they are lightly golden, about 3 minutes. Drain on paper towels.
