Ingredients
  

  • 1 whole small white cabbage shredded
  • 4 each sweet onion chopped
  • 1 each small cucumber diced
  • 4 whole plum tomato quartered
  • 1 tablespoon fresh greens snipped coarsely with scissors Eruca sativa
  • 1 tbsp roughly chopped fresh parsley
  • 1 tbsp fresh coriander leaves snipped coarsely with scissors
  • 2 oz feta cheese sliced
  • 1 - 2 oz black olives
  • 3-1/2 fl oz best-quality olive oil
  • ¼ cup Fresh lemon juice
  • 1 pinch sea salt
  • 1 pinch black pepper

Instructions 

  • Arrange the ingredients in a large salad bowl, starting with the shredded cabbage at the bottom and finishing with the black olives on top.
  • Make the dressing: mix the olive oil, lemon juice and seasoning together. Pour the dressing over the salad just before serving.
