In a large pot boil water and salt enough to cover potatoes. Boil potatoes until tender on the outside but crisp in the center.
In a skillet, heat oil and saute the peppers and onions just until translucent.
Arrange potatoes in a baking dish. Add garlic, black pepper,pepper sauce and sauted vegetables on top. Garnish with cheddar cheese if desired.
Place dish in oven for 20 minutes or until potatoes are tender. If you are topping the potatoes with cheese, cover the pan with aluminum foil to prevent the cheese from buring. You can also add the cheese during the last 10 minute of cooking for good results.
