2or 3 jalapeño peppersblistered, peeled, and chopped or uncooked chopped jalapeños
1tspsea salt or to taste
pepper to taste
3or 4 thick slices of whole wheat breadcrumbed
1cupgrated cheese
Instructions
Put all the tomatoes and peppers in a deep saucepan. Bring to a boil. Reduce the heat. Simmer until the tomatoes are reduced to a thick sauce, about 30 minutes.
Salt and pepper to taste.
Stir in the bread crumbs.
Pour the tomato mixture into a 2 quart casserole.
Bake 30 minutes at 350° or until the mixture is fairly firm and not soupy. Top with grated cheese.
