Ingredients
  

  • 2 cups buttermilk
  • 1 cup Old fashioned rolled oats
  • 2 whole egg
  • ¾ cup dark brown sugar
  • 1-2/3 cups whole-wheat flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 tbsp vegetable oil

Instructions 

  • Combine the buttermilk and the oats in a bowl, stir well, cover, and refrigerate. Let stand for at least 6 hours, preferably overnight, before mixing and baking the muffins.
  • Preheat the oven to 400°F. Grease muffin pans.
  • Put the eggs in a mixing bowl and beat just until blended. Add the sugar and beat until smooth and well blended. Stir in the buttermilk-oatmeal mixture. Add the flour, baking soda, salt, and oil, and beat until the batter is well blended.
  • Fill the muffin tins about three-quarters full with batter and bake for about 20 minutes. Start testing for doneness after 15 minutes. Remove the muffins from the cups and cool on racks or serve hot from the pan.
