Ingredients
  

  • 2 lbs Yukon gold or other thin-skinned potatoes
  • 4 large cloves garlic
  • 1 to 1-1/2 cups nonfat or low-fat buttermilk
  • 1/2 cup chopped fresh basil
  • Salt to taste
  • One 8-ounce package smoked mozzarella or fresh mozzarella, thinly sliced
  • pepper to taste

Instructions 

  • Scrub but do not peel the potatoes and boil with the garlic until tender.
  • Mash the potatoes and garlic with a potato masher or in a food mill. Stir in 1 cup of the buttermilk and the basil. Add more buttermilk until you reach a creamy consistency. Season with salt and pepper.
  • Spoon half of the mashed potatoes into a shallow casserole and top with half of the mozzarella slices.
  • Top with the remaining mashed potatoes and arrange the remaining mozzarella slices on top. Refrigerate or freeze.
  • To serve, let defrost if frozen. Preheat the oven to 375 degrees. Bake the casserole for 20 to 25 minutes, or until the mixture is bubbly and the top is browning.
