One8-ounce package smoked mozzarella or fresh mozzarella, thinly sliced

Instructions
Scrub but do not peel the potatoes and boil with the garlic until tender.
Mash the potatoes and garlic with a potato masher or in a food mill. Stir in 1 cup of the buttermilk and the basil. Add more buttermilk until you reach a creamy consistency. Season with salt and pepper.
Spoon half of the mashed potatoes into a shallow casserole and top with half of the mozzarella slices.
Top with the remaining mashed potatoes and arrange the remaining mozzarella slices on top. Refrigerate or freeze.
To serve, let defrost if frozen. Preheat the oven to 375 degrees. Bake the casserole for 20 to 25 minutes, or until the mixture is bubbly and the top is browning.
