Combine the lemon juice, rind, water, sugar, and vanilla in a saucepan.
Peel the pears, leaving the stems on, and place in the liquid. Give a little stir. Bring to a simmer. Cover and poach gently until the pears are slightly tender, about 8 - 10 minutes. Do not over-cook. If the liquid does not completely cover the pears, roll them around during the cooking.
Remove cover and cool. Refrigerate in liquid until serving time.
