Ingredients
  

  • 1 10- ounce package frozen lima beans
  • 1/2 lb mushrooms
  • 6 scallions finely chopped
  • 1 tbsp chopped parsley
  • 1/2 tsp marjoram
  • 3 tbsp wine vinegar
  • 1/3 cup olive oil
  • 1 garlic clove minced
  • 1/2 tsp salt
  • 1/4 tsp freshly ground pepper
  • 1/8 tsp dry mustard
  • Salad greens

Instructions 

  • Cook the lima beans according to package directions and drain. Trim the mushrooms, wash and dry thoroughly. Cut the mushrooms into thin slices.
  • Combine the beans, scallions, parsley, marjoram, vinegar, oil, garlic, salt, pepper and mustard. Allow to marinate for at least 30 minutes.
  • Add the mushrooms and toss lightly. Pile the mixture atop salad greens.
