Ingredients
  

  • 4 cups corn
  • 2 Tbsp. vegetable broth
  • ½ cup chopped onion
  • ½ cup chopped bell pepper
  • 1 medium tomato diced
  • ¼ tsp. red pepper flakes
  • ¼ tsp. salt
  • ¼ tsp. pepper

Instructions 

  • 1. In a medium saucepan, cook onion and pepper in veggie broth until tender (5 minutes). Stir in remaining ingredients.
  • 2. Cover and cook over low heat until vegetables are tender (10-15 minutes).
