Ingredients
  

  • 12 cups peeled cored, and quartered tomatoes
  • 1 cup chopped celery
  • 1/2 cup chopped onion
  • 1/2 cup green chopped pepper
  • 3 tsp salt optional
  • 1/3 cup bottled lemon juice optional

Instructions 

  • Simmer the vegetables for 10 minutes.
  • Ladle into clean, hot pint jars: the vegetables will have released their juices to provide canning liquid, so do not add any water. Leave 3/4 inch of headroom; adjust lids.
  • Process in a B-W Bath for 40 minutes for the pints. Remove jars; complete seals if necessary.
