To prepare batter: In a small bowl, combine milk, melted butter, egg, vegetable oil and the water and mix well. Measure pancake mix into a medium mixing bowl. Gently stir the wet ingredients into the pancake mix using a batter whisk or a wide blending fork. A few lumps are OK; don't overly mix the batter or your pancakes will be tough.
To cook pancakes: Heat a nonstick griddle or large skillet and, when hot, brush lightly with vegetable oil. Pour 1/4 cup batter onto the hot griddle. If desired, scatter a couple of fresh berries on top. Cook over medium-high heat until bubbles appear on the surface, 1 to 2 minutes. Turn and cook on the other side until golden, about 1 minute. Remove to a platter and serve immediately with butter and warmed pure maple syrup.
