In a separate bowl, combine egg substitute, milk, oil, and almond extract.
Add all at once to flour mixture. Stir just until moistened. Carefully fold in chopped pears.
Spoon into muffin tins that have been sprayed with nonstick cooking spray or lined with papers. Sprinkle chopped almonds on top. Bake 20 to 25 minutes or until wooden pick inserted in the center comes out clean.
