In a large saucepan, combine the lemon juice, 1-1/2 tablespoons water, and 1/4 cup of sugar; keep warm over low heat. Peel, core, and coarsely chop the pears and add them to the saucepan. Bring to a boil, cover, and simmer for 15 minutes, or until the pears are very soft. Transfer the mixture to a blender or food processor and purée for 1 minute. Transfer the mixture to a mixing bowl and refrigerate until well chilled.
Add the yogurt cheese, milk, pear brandy, and the remaining sugar to the chilled purée. Whisk until thoroughly combined.
Transfer the mixture to an ice cream maker and freeze according to the manufacturer's instructions.
