12ozcenter cut pork loin chop2 chops well trimmed about 3/4 thick
1whole greenyellow or Red bell pepper, finely chopped
1/3cupdiced red or yellow onion
1teaspoonblackened cajun spice
16 to 18ozbaked beansundrained
Instructions
Coat a large nonstick skillet with nonstick vegetable spray. Heat over medium-high heat until hot. Add chops, bell peppers, and onion. Sprinkle evenly with seasoning mix and cook for 5 minutes. Turn chops, stir vegetable mixture, and continue cooking for 5 more minutes. Add beans to skillet and stir into vegetable mixture. Continue to cook for 4 to 5 minutes or until chops are no longer pink in center, stirring occasionally.
