Ingredients
  

  • 1 lb. pork tenderloin sliced 1" thick
  • ¼ tsp. salt
  • tsp. pepper
  • 2 Tbsp. apple jelly
  • 2 Tbsp. brandy
  • 1 Tbsp. chopped fresh parsley

Instructions 

  • 1. Sprinkle both sides of each pork slice with salt and pepper. Microwave apple jelly to soften (15 seconds). Brush tops of pork with jelly.
  • 2. Coat a large skillet with nonstick pan spray and heat over medium heat. Add the pork and cook until no longer pink in the center (5 minutes per side).
  • 3. Add the brandy to the skillet to deglaze, stirring the browned bits from the bottom of the skillet into the brandy. Cook until slightly thickened (2 minutes).
  • 4. Serve pork with brandy sauce and parsley.
