Pork in Apple Brandy Glaze

- 1 lb. pork tenderloin sliced 1" thick
- ¼ tsp. salt
- ⅛ tsp. pepper
- 2 Tbsp. apple jelly
- 2 Tbsp. brandy
- 1 Tbsp. chopped fresh parsley
1. Sprinkle both sides of each pork slice with salt and pepper. Microwave apple jelly to soften (15 seconds). Brush tops of pork with jelly.
2. Coat a large skillet with nonstick pan spray and heat over medium heat. Add the pork and cook until no longer pink in the center (5 minutes per side).
3. Add the brandy to the skillet to deglaze, stirring the browned bits from the bottom of the skillet into the brandy. Cook until slightly thickened (2 minutes).
4. Serve pork with brandy sauce and parsley.
