1/4cupclarified butter
1/3cupminced shallots
1tablespoonlemon juice
1 ½cupsbrown sauce
1cupdry white wine
2teaspoonpink peppercorns
½teaspoonsalt
¼teaspoonfreshly ground pepper
2teaspoonparsley flakes
Instructions
Flatten the pork slices with a mallet and dredge in the seasoned flour.
Heat the clarified butter in a large sauté pan until bubbling. Add the pork slices and shallots and sauté for 30 seconds, taking care not to let the shallots brown. Add the lemon juice, Brown Sauce, white wine, peppercorns, and salt and pepper.
Reduce the heat and simmer over low heat for 15 minutes, gently stirring occasionally.
Add the parsley flakes, add more white wine to adjust the consistency of the sauce if necessary, bring to a boil, and serve.
