Ingredients
  

  • 1 ml nonstick cooking spray
  • 1 whole large white onion cut into 1/8-inch-thick slices
  • 2 whole Garlic cloves chopped fine
  • 3 ½ tablespoon finely chopped Fresh thyme
  • 1 tsp salt or to taste
  • 1 pinch Freshly ground pepper to taste
  • 4 whole large baking potatoes peeled and cut into 1/8-inch-thick slices
  • 1/2 cup low-fat parmesan cheese
  • ½ cup non-fat sour cream
  • 1 cup chicken broth or stock defatted

Instructions 

  • Preheat oven to 375°F. Coat a large baking dish generously with cooking spray. Mix together onion, garlic, thyme, salt, and pepper. Layer the ingredients in the baking dish in the following order:
  • 1/4 of the potato slices
  • 1/3 of the onion mixture
  • 1/4 of the parmesan cheese
  • Repeat layers, ending with potato slices, then add sour cream and sprinkle with remaining Parmesan cheese. Pour broth into pan at sides until it comes about halfway up. Bake 1 hour, until potato and onion are tender.
