4whole large baking potatoespeeled and cut into 1/8-inch-thick slices
1/2cuplow-fat parmesan cheese
½cupnon-fat sour cream
1cupchicken broth or stockdefatted
Instructions
Preheat oven to 375°F. Coat a large baking dish generously with cooking spray. Mix together onion, garlic, thyme, salt, and pepper. Layer the ingredients in the baking dish in the following order:
1/4 of the potato slices
1/3 of the onion mixture
1/4 of the parmesan cheese
Repeat layers, ending with potato slices, then add sour cream and sprinkle with remaining Parmesan cheese. Pour broth into pan at sides until it comes about halfway up. Bake 1 hour, until potato and onion are tender.
