Rub the pork well with the seasonings. Place on a rack in a roasting pan and roast at 325°F, allowing about 25 minutes per pound. After 1-1/2 hours remove from the oven and pour off excess fat.
Add the apples to the pan. Dip them in pork fat and sprinkle lightly with sugar. Return the roast to the oven and continue roasting till the meat is done - about 1 hour. Transfer the roast to a hot platter to rest 10 to 15 minutes before serving.
Pour excess fat from the pan and add the heavy cream, a touch of salt, and the nutmeg. Let this boil down for a few minutes with the apples. Serve with the pork. Braised onions go very well with this combination.
