Cut the potatoes lengthwise into equal-sized wedges. Place in a large bowl or pot of cold water, and set aside for 5 minutes.
Drain the potatoes, and blot dry with paper towels or clean kitchen towels. Transfer to a medium-sized bowl, and spray with the butter spray, tossing until well coated.
Place the onion flakes and onion salt in a small dish, and stir until well blended. Sprinkle the mixture over the potatoes and toss, making sure the spices are evenly distributed.
Lightly spray a large baking sheet with butter-flavored nonstick cooking spray, and arrange the potatoes in a single layer on the sheet. Bake in a preheated 425°F oven for 15 to 20 minutes, or until the potatoes are golden and tender.
Remove the potatoes from the oven, and sprinkle with the cheese. Serve hot.
