Ingredients
  

  • 4 whole flour tortillas
  • 4 oz grated low-fat Monterey Jack or Mexican-style cheese about 1 cup
  • 15 oz Black beans rinsed, drained
  • 4 whole green onions chopped fine
  • ¼ bunch cilantro chopped
  • 1/4 - 1/2 cup salsa roasted garlic
  • 1 cup roasted red peppers drained, rinsed and chopped

Instructions 

  • Heat a large nonstick skillet over medium-high heat for 1 minute. Place a tortilla in the skillet followed by the cheese, peppers, black beans, onions, cilantro, and salsa for the filling. Cut the quesadillas into wedges for serving.
