Trim the pork chops of visible fat. Season with salt, pepper, garlic powder, and onion powder.
Heat a large nonstick skillet over medium-high heat for 2 minutes. Pan-fry the chops for 4 - 5 minutes on each side or until cooked through. Transfer the chops to a plate and keep warm until ready to serve.
To serve, glaze the chops for the children with the peach preserves. Pour the mustard sauce over the chops for the grown-ups.
