- 8 oz white navy beans
- 8 oz Grits corn, white, quick, enrich, dry ( dry hominy )
- ½ lb salt pork sliced and rinsed
- 1/8 tsp marjoram
- 1 dash Black pepper freshly ground, to taste
In separate bowls soak the beans and the hominy in ample water overnight.
Drain and place both in a 4-quart heavy pot or Dutch oven. Add the remaining ingredients and cover with water.
Bring to a boil, turn down to a very low simmer, and cover. Cook until the dish is thick and the hominy tender, about 4 hours.
You will have to keep adding water to this dish as you go. When the hominy is about tender, remove the lid and cook until the excess water has been absorbed or evaporated. Do not drown this dish!
