13ozCanned light tunapacked in water, well drained
2/3cuplow-fat small-curd cottage cheese
2tablespoonsnipped chives
4dash cayenne pepper

4whole plum tomatoes

Instructions
Place the drained tuna in a medium-sized bowl. Add the cottage cheese, chives or garlic chives (if desired), cayenne or red pepper flakes (if desired), and black pepper, and mix the ingredients well, taking care to leave discrete pieces of tuna.
Cut the tomatoes into 1/3-inch dice. Cut the cucumber into quarters lengthwise and then slice it crosswise into pieces 1/4 inch thick. Add the tomatoes, the cucumber, and the scallions to the tuna mixture, and toss the ingredients to combine them well.
Check the seasonings, adding the salt (if desired) and more pepper.
