Instructions
Use French or Italian bread, crusts trimmed, for the bread crumbs.
Melt the butter in a skillet, add the scallions or shallots, and toss to coat well. Mix with the rest of the ingredients. Taste for salt.
Use to stuff the breast cavity. This amount should be more than ample for a 20-pound bird.
